One of the best spots for mountain stream fishing at Isawa River.
In the upper reaches of the Ibo River system is the Isawa River. The Isawa River has an established reputation among mountain stream fishing enthusiasts and is visited by fan fishermen. We use the wonderful water of the Isawa River to cultivate high quality salmon.
The type of salmon we offer is the Donaldson type. The Donaldson Salmon was cultivated by Dr. Donaldson of the University of Washington in the U.S. and is the product of crossing the parents of a Rainbow Trout and Steelhead. The Donaldson grow faster than normal Rainbow Trout, and some can exceed 10kg in 4-5 years.
Our salmon are raised in the clear mountain streams of Shiso City. Although it takes longer to raise salmon in the clear mountain streams than in seawater, they have a unique crunchy texture and deep flavor. Our salmon are fed with astaxanthin, the same ingredient that shrimp and crab intake in the ocean, to give them the bright salmon color.
(Note) Astaxanthin is a nutrient found in nature.
It is an antioxidant that is 100 to 1,000 times more potent than vitamin E and protects the body from oxidative stress.
The pink color of salmon flesh is also due to astaxanthin. The salmon feed on krill, which contains high levels of astaxanthin, resulting in large amounts of astaxanthin in salmons’ bodies. The high levels of astaxanthin in salmon allow them to withstand harsh environments and stress.

Best growing environment
The aquaculture ponds are located deep in the mountains at an altitude of 400 meters, where the water temperature is just right. The fish are raised in a spacious aquarium where the fish density is low, no more than eight fish per cubic meter, helping reduce the stress on the fish. We are able to ship 10,000 fish per year.



We deliver all year round and focus on good processing.
About a week before landing, the fish are transferred to a fishpond and made to fast. Fasting the fish will make their flesh firmer and preserve the flavor and quality. The blood is drained from the fish and then they are vacuum-packed and delivered by refrigerated courier.
Sea farming is limited to the period from February to June, when the water temperature is low, but Shiso salmon is farmed at the right temperature all year round, making it possible to ship throughout the year.
Currently, we mainly sell the Shiso salmon for business use. We are planning to sell them as fillets and in unites of one fish.

The Shiso salmon are vacuum-packed and stored with ice in Styrofoam for delivery.
Besides sushi use, we offer the Shiso salmon canned format, koji-marinated (marinated with malted rice), and saikyo-marinated (marinated fish with miso and Japanese sweet rice wine).
